I’m not a fan of all fungi. Botrytis, for instance, is determined to ruin every last peach in the fruit bowl. I like a certain degree of fuzz, but seriously, COME ON NOW. It’s called sharing. Luckily, I’m also purposely growing some delicious fungi and slowly turning into an eccentric mushroom grower. The good kind of fungi are loving the conditions here in the midst of the Morton National Park. So much so that Milton Mushrooms will be coming to a market near you in March. Autumn is in the air, and with it, delicious, hearty mushroomy dinners. Mmmmm. Also available at market will be take-home ghost fungus jars. Nature’s night light: bioluminescent fungi. Not edible, but these gorgeous clusters will brighten your night and blow your mind. I’m seriously excited about them. They’re grown from a culture line of Omphalotus nidiformis that I’ve dubbed ‘Jon Snow.’ The Night Watch will never be the same.

Phoenix and White Oyster cultures are now available online. Soon to follow will be the ‘Jon Snow’ strain of ghost fungus (Omphalotus nidiformis) for all you home enthusiasts.
